Ingredients

• 1 large chopped red onion
• 2 chopped carrots
• 3 teaspoons of thai red curry paste
• 1-2 teaspoons of red chilli paste
• 1 large tin of cherry tomatoes or chopped tomatoes
• 2 tbsp tomato purée
• 500ml vegetable stock (can use Marigold swiss bouillon powder)
• 1 400g tin of chickpeas
• 3 tbsps of couscous
• Chopped parsley
• Tiny bit of sea salt to taste
• 1 teaspoon of sugar
• Olive oil

Cooking instructions

Fry the onion and carrot in oilve oil (you can also add a knob of garlic and herb butter) then add the curry paste and red chilli paste (can add more if you want it really spicy!) and cook for a couple of mins. Then add everything else except the couscous. Simmer for about 10 mins then add the couscous and cook a further three to five mins. Can serve with grated Parmesan and chunk of artisan sourdough bread.
