Chris Evans’ wife’s Stem Ginger Cookies recipe

350g Self raising flour
1 tablespoon ground ginger
1 teaspoon bicarbonate of soda
200g caster sugar
115g unsalted butter
85g golden syrup
1 medium egg, beaten
35g crystallised stem ginger (add more to taste – Tash used 5 pieces)
3 baking trays greased with butter

Heat your oven to 170 deg C.

Melt the butter and syrup, blend together and allow to cool.

Sift plain flour, ginger, sugar and bicarb and mix together.

Mix together with a wooden spoon.

Roll into 24 small balls and bake for 15-20 minutes.
