Rice Crispy Cake aka Green Cake

5oz margarine
4oz self raising flour
2oz soft brown sugar
2 tablespoons cocoa
4oz rice crispies
1 level teaspoon baking powder
pinch salt
14oz icing sugar
4 tablespoons water
few drops peppermint essence
green food colouring
milk chocolate cake topping

13inch x 9inch swiss roll tin, greased

Melt together the margarine, flour, sugar, cocoa, baking powder and salt, then stir in the rice crispies

Place in the swiss roll tin and bake at 160 degrees C for 20 mins

Meanwhile, make the icing by mixing together the icing sugar, water, peppermint essence and food colouring, and cover the cooked base (while still warm) with this icing

Allow to cool and set, then top with melted chocolate
